Chocolate Caramel Cake



This rich cake makes an impressive centrepiece for any summer tea party.


Ingredients

  • 300g butter, plus extra for greasing
  • 300g light muscovado sugar
  • 3 large eggs
  • 1½ tsp baking powder
  • 85g cocoa powder
  • 225g plain flour
  • 225ml soured cream
  • 300ml pot double cream
  • 5 tbsp dulce de leche or caramel sauce
  • 25g caramel flavoured chocolate, finely chopped (we used Lindt)

Method

  1. Heat oven to 180C/160C fan/gas 4. Lightly grease 2 x 23cm loose-bottom cake tins and line with a circle of baking parchment. Beat together the butter and sugar until pale and creamy. Add the eggs, one at a time, beating well between each addition, then add the baking powder, cocoa and a third of the flour. Mix well to combine, then stir in half the soured cream. Alternating between adding the flour and soured cream, mix everything until just combined. Spoon into the prepared tins, then smooth over the surface with a spoon.
  2. Bake for 30 mins or until the cakes are firm to touch and a skewer inserted into the centres comes out clean. Leave to cool in the tins for 5 mins, then turn out onto a rack and cool completely.
  3. When you’re ready to serve, whip the double cream with 2 tbsp Dulce de leche until soft peaks form. Place 1 cake on a serving plate and spread with half the cream, then drizzle over the remaining Dulce de leche. Top with the other cake, then spread the remaining cream on top. Sprinkle with the chocolate. Chill until ready to serve.

Pineapple Fried Rice Recipe


Serves 4


Ingredients:


  • 1 can of pineapple and remove liquid

  • 2 tablespoon vegetable oil

  • 1 small onion finely chopped

  • 1 cup lean pork (diced)

  • 3-4 cups cooked cold rice

  • 1/4 cup roasted cashews

  • 2 scallions chopped

  • 3 tablespoon soy sauce


Directions:


  1. Cut the pineapple into small pieces

  2. Heat the oil in a wok cook the pork thoroughly

  3. Add onion and stir-fry for about 3-5 minutes until softened. Add the rice and cook for 3 minutes.

  4. Mix all ingredients together and let it cook for another 5-10 minutes. Add salt and pepper to taste.

Ingredients:


  • 4 lbs. chicken wings

  • 1/2 cup honey

  • 1/4 cup soy sauce

  • 2 tablespoon ketchup

  • 1 clove garlic, crushed

  • 4 tablespoon cooking oil

  • salt

  • pepper


Directions:


  1. Mix all ingredients together and let it marinate for 15 minutes.

  2. Bake for aprx 45 minutes 350 degrees Fahrenheit. Flip chicken every 15 minutes for an even cook.

General Tso’s Chicken Recipe


General Tso’s Chicken Recipe


Serves 4


Ingredients:


  • 3 lbs deboned dark chicken meat, cut into large chunks

  • 1/4 cup soy sauce

  • 1 teaspoon white pepper

  • 1 egg

  • 1/2 cup cornstarch

  • ½ cup Vegetable oil for deep frying

  • 2 cups sliced green onions

  • 12 small dried hot peppers


Sauce :


  • 1/2 cup cornstarch, blended with 1/4 cup water

  • 1 1/2 teaspoon minced garlic

  • 3/4 cup sugar

  • 1/2 cup soy sauce

  • 1/8 cup white vinegar

  • 1/4 cup cooking wine

  • 1 1/2 cup hot chicken broth


Directions :


  1. Mix sauce’s ingredients together in a bowl

  2. In separate bowl, mix chicken, soy sauce and white pepper. Stir in egg. Add cornstarch and mix until chicken pieces are coated evenly. Add vegetable oil to help separate chicken pieces.

  3. Deep fry chicken until its crispy then drain on paper towels.

  4. Place a small amount of oil in hot wok and cook onions and peppers.

  5. Add all ingredients together then serve with rice.

Birds Nest Soup Recipe


Serves 6 

Ingredients:

•    8 oz bird’s nests
•    1 tablespoon cooking oil
•    1 tablespoon fresh ginger root (chopped)
•    4 oz chicken (diced)
•    4 oz mushrooms (diced or sliced)
•    8 oz can of quail eggs (drained)
•    6 cups of chicken stock
•    2 tablespoon cornstarch (mix with 2 tablespoon of cold water)
•    1 cup of water


Directions:
1.    Soak bird’s nest overnight. Then remove water and clean.
2.    In a pan, cook the diced chicken then set aside.
3.    In a pot, add cooking oil and boil the chicken stock then add in birds nest. Let it heat for 10 minutes.
4.    Add the rest of the ingredients and let it heat for another 10 minutes.
5.    Add in cornstarch and stir.

Ingredients:




  • 4 whole boneless chicken

  • 3 tablespoon vegetable oil

  • 1 green pepper, cut in strips

  • 1 small onion, sliced

  • 1 cups diced celery

  • 1 chicken bouillon cube dissolved in 1/2 cups water

  • 1 teaspoon salt

  • 3 tablespoon apple cider vinegar

  • 1 1/4 cups brown sugar

  • 1 can diced chunk pineapple, undrained

  • 3 tablespoon cornstarch

  • 2 tablespoon water


Directions:


  1. Cut chicken into thin strips.

  2. Pour oil in hot wok and heat cook chicken

  3. Add the rest of the ingreadients and cook for 5-10 minutes. Stir constantly then let it simmer for 3 minutes. Serve over rice.

Ingredients:

•    3 cups of chicken broth
•    1 cups of water
•    1 tablespoon salt
•    1/2 teaspoon Sprinkle white pepper (or black pepper)

•    2 eggs (stirred in a bowl)


Directions:
1.    In a pot, heat chicken broth, green onions salt and pepper.
2.    Pour stirred egg slowly while stirring constantly.

Ingredients:

  • 1 lb. boneless chicken, cut into 1-inch strips

  • 3/4 cup orange juice

  • 1/3 cup honey

  • 1/4 cup soy sauce

  • 1/2 teaspoon pepper

  • 2 tablespoon cooking oil

  • 4 green onions, cut-up

  • 1 tablespoon cornstarch

  • 1 teaspoon ground ginger

  • 2 teaspoon garlic salt

  • 2 carrots, cleaned and sliced

  • 2 celery stalks, sliced

  • 1 cup cashews


Directions:

  1. Sauce directions: combine juice, soy sauce, honey, cornstarch and seasonings.

  2. In a large wok heat up 1 tablespoon oil then add stir-fry vegetables for several minutes until the onions are cooked. Remove from wok.

  3. Heat another tablespoon of oil and stir-fry chicken strips until browned and tender.

  4. Add ingredients together and stir. Servewith hot rice.

  • 4 cup cold cooked rice

  • 2 tablespoon oil

  • 2 onions, chopped

  • 1/2 teaspoon pepper

  2. Add shrimp, salt, pepper, beaten eggs and pour over onions (scramble together).

  • 3 lbs. boneless chicken breasts, cubed

  • 1 tablespoon cornstarch

  • 1 tablespoon dry sherry

  • 1 teaspoon finely chopped, peeled fresh ginger root or 1/2 teaspoon ground ginger

  • 4 tablespoon vegetable oil

  • 5 tablespoon honey

  • 1 cups walnuts

  • 1/2 cups cut green onions, sliced

  • 1 clove garlic, finely chopped


Directions:


  • In a bowl, mix cornstarch, soy sauce, sherry and ginger. Stir in chicken chunks and let it marinate for 30 minutes.

  • Heat wok and add 2 tablespoons oil and the walnuts. Cook walnuts, green onions and garlic to wok. Remove contents into a bowl.

  • Add remaining 2 tablespoons oil to wok then add chicken and its marinade. heat chicken until brown then add the rest of the ingredients.; heat throughly and serve immediately.

Ingredients:

•    500 g duck
•    6 cups chicken stock
•    25 g ginseng root
•    25 g caterpillar fungus
•    25 g box thorn berries

Directions:


1. Mix together the soy sauce, sherry, pepper and scallions with the chicken and marinate for 30 minutes.


2. Beat together the egg, cornstarch and flour to make a smooth batter. Dip the chicken pieces into the batter to coat well.


3. Heat the oil then deep fry the chicken pieces a few times at a time until light brown.

4 skinless boneless chicken breasts

2. Remove chicken from marinade. Beat egg slightly with 1/2 teaspoon water.
3. Dip chicken pieces in egg and roll in almonds to coat.
4. Heat oil and then fry chicken pieces until crisp golden brown.

Ingredients:


  • 3lbs chicken, diced

  • 4 tablespoons Oil

  • 1 Scallion

  • 2 Hot peppers or more

  • 1 tablespoon Sherry

  • 2 tablespoon soy sauce

  • 1/2 cup Chicken broth

  • 2 tablespoon Wine vinegar

  • 1 tablespoon Sugar

  • 1/2 teaspoon Salt

  • 1 teaspoon Anise pepper

  • 1 tablespoon Cornstarch


Directions:


  1. Marinate chicken with sherry, soy sauce mixture for 20 minutes.

  2. Cut scallion and hot peppers diagonally into 1-inch pieces. Grind anise pepper to powder. Mix chicken broth, soy sauce, wine vinegar, sugar, salt and pepper.

  3. Heat oil. Add scallion, and stir fry several times.

  4. Add sherry, soy mixture and chicken to scallions and hot pepper, and stir-fry for 2 minutes more. Add chicken broth mixture, mix well.

  5. Cook over low heat until chicken pieces are tender. Add cornstarch to thicken. Serve.
